Lately I feel like I have time for nothing. I don’t cook until Ava is sleep which is usually 9pm and by the time I am done it is 11:30, 12, which means it’s time for bed. I have been trying to use my Crock Pot more and I think it’s going to work out.
What I love about the crock pot is it’s not messy, there aren’t many dishes to do after and you don’t have to stand by the store stirring, flipping, etc. The best part about it is you dump everything in and walk away. You can go to work, the mall, clean, do whatever you need to do. Not to mention, your house is going to smell AMAZE BALLS!!!

Chicken Taco Mix
Ingredients:
1½ lbs. chicken breasts
1 (16 oz.) jar salsa
1 (15 oz.) can black beans, drained
½ lb. (8 oz.) frozen corn
1 Tbsp chili powder
½ Tbsp cumin
½ Tbsp minced garlic
½ tsp dried oregano
¼ tsp cayenne pepper
¼ tsp salt
to taste cracked pepper
2 cups dry rice
8 oz. shredded cheddar
½ bunch cilantro (optional)
How To Make It
Now, I did not have Salsa so I made some really quick. I had canned tomatoes cut up, I put a bit of green peppers in there, onions, cilantro, and red peppers. Close enough right? Then I mixed it all together in a pan and let it cook for a bit.

Black Beans need to be drained all the way, Mix all the seasonings together, I used a little more corn than needed but that’s because I love corn. Now the cilantro is not needed until the entire meal is ready.

(Red Peppers, Green Peppers, Yellow Onion, Cilantro, Lemon juice, and canned tomatoes) These are the products I used to make the salsa that is needed for the recipe.

Place chicken in the crock pot. Dump all other ingredients over top, mix, cover and cook.

The recipe said to have it on for 8 hours. I set mine for 6 hours and I used a liner so I wouldn’t have to scrub the crock pot. Close to the end of the 6 hours start making rice. Also for those that like cheese it is amazing sprinkled over top of the meal when it is served.
