Fall and Winter put me in a mood for stews and soups!
I am not picky but I do have my favorites! This chicken tortilla is one of them.
Originally I ate this soup at Red Lobster when I was working there some years ago. I have added some ingredients to it so it could be to my liking.
Chicken Tortilla Soup
You’ll need the following ingredients:

- Chicken Broth
- Chicken (cooked)
- Black Beans
- Tomato Paste
- Tortilla Chips
- Sharp Cheddar Cheese
- Frozen Broccoli
- Frozen Corn
Now, IF you have the time I prefer to use natural broth(home made).
Pull the chicken after it is cooked as it is in the picture above. Thaw the broccoli & corn and drain the beans.
Get your pot ready and pour the chicken broth in. Season to taste but I usually do a bit of salt, cajun seasoning, and pepper. Once the broth is in the pot let it warm up a little then add the chicken in. After the chicken is in add the tomato paste, wait until the tomato paste melts to add everything else in.
Once the beans are drained dump them in there following with broccoli. Last but not least add broccoli & corn. Let it cook for 20 minutes and tadaaa it’s ready to be served.

Serve in a bowl. Over top sprinkle some tortilla chips and cheese and get ready to be blown away!!
